Makes 8 servings

Substances
1 kg (2.2 lbs) potatoes, weighed after peeling
3 eggs, at room temperature
40 g of butter
20 g grated parmesan cheese
170 g all-purpose flour
1 tablespoon dried herbs, we used basil
flour, to mud your counter
chilly water


Preparation
1. Carry a big pot of water to a boil to poach your gnocchi.
2. Select potatoes of an analogous measurement, and a pot simply sufficiently big to carry them so they do not bump round.
3. Boil the potatoes in salted water till simply cooked via, then mash very nicely with the butter.
4. Progressively add the parmesan cheese, flour and herbs, mixing very nicely.

6. Take about 1/4 of the combination, place it in your nicely floured counter and steadily work and roll it out into an extended sausage.
7. When the sausage dough is about 3/4 inch in diameter, lower it into 1 inch lengths.
8. Poach these items within the giant pot of boiling water for about 2 minutes (till the gnocchi all float to the highest).
9. Take away with a slotted spoon and plunge into the bowl of chilly water.
10. Drain nicely.
11. Repeat with the remaining combination.
12. Serve gently reheated within the sauce of your alternative for a couple of minutes.
13. The gnocchi will preserve for a number of days. You may freeze them in a single layer and reheat very well after defrosting.
